1 tablespoon olive oil

6 small bone-in chicken breasts (about 2½ lb), skinned

1 package (8 oz) sliced fresh mushrooms (about 3 cups)

1 medium onion, sliced

1 clove garlic, finely chopped

1 can (14.5 oz) no-salt-added diced tomatoes, undrained

1 can (6 oz) no-salt-added tomato paste

½ cup dry white wine

1 teaspoon Italian seasoning

½ teaspoon salt

1⁄8 teaspoon pepper

6 oz uncooked whole wheat fettuccine or linguine

2 tablespoons small fresh basil leaves

1. In very large skillet, heat oil over medium heat. Cook chicken in oil on all sides, turning occasionally, until browned. Remove chicken and set aside; reserve drippings in skillet.

2. Add mushrooms, onion and garlic to drippings in skillet. Cook about 5 minutes, stirring frequently, just until vegetables are tender. Return chicken to skillet.

3. In medium bowl, stir tomatoes, tomato paste, wine, Italian seasoning, salt and pepper. Pour over chicken and vegetables. Heat to boiling; reduce heat. Cover; simmer 30 to 35 minutes, turning chicken once, until juice of chicken is clear when thickest part is cut to bone (at least 165°F).

4. Meanwhile, cook fettuccine as directed on package, omitting salt and oil; drain. Serve fettuccine with chicken and sauce; sprinkle with basil.
