You might not find all the ingredients at your local supermarket, but they can all be found at any Middle Eastern market or ordered online. Otherwise you can substitute with other vegetables of your choosing.

To get the desired amount of cooked lentils, you’ll need a little under ½ cup (80 g) dried lentils. Alternatively, you could use 3.5 ounces (100 g) finely chopped walnuts.

If you cannot find pomegranate molasses, you can use cranberry juice concentrate or balsamic vinegar mixed with a little sugar.

The aprax can be served warm or cold. They are really good the day after when the flavors have developed.

Aprax is typically served with Mast û Xiyar, Kurdish cucumber salad with garlic, yogurt, and dried mint, easily veganized with vegan Greek-style yogurt.
