Ingredients:

1 can pumpkin purée

½ cup maple syrup

⅓ cup coconut oil

2 tablespoons dark molasses

2 tablespoons chia seeds, ground

6 tablespoons water

1¾ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

1 pinch salt

½ teaspoon allspice powder

¼ teaspoon cinnamon powder

¼ teaspoon ground cardamom

Directions:

1. Combine the pumpkin purée, maple syrup, coconut oil, molasses, chia seeds, and water in a bowl and allow to rest for 5 minutes.

2. Stir in the flour, baking powder, baking soda, salt, and spices and give it a quick mix.

3. Spoon the batter into a loaf pan lined with baking paper or greased with butter.

4. Bake in a preheated oven at 350°F for 30-40 minutes.

5. When done, remove from the oven and allow to cool to room temperature before slicing and serving.
