BOTH OF US HAVE FAMILY TRADITIONS FOR EATING DUNGENESS CRAB ON SPECIAL OCCASIONS. Cracked casually onto a platter for hungry guests, these impressive creatures start an instant party. The question we ask ourselves: Do I build a pile and risk a siege, or eat as I go, protecting every bite?

However you devour it, crab has a remarkable power to elevate vibrant flavors, and in this flavorful East-meets-West dish, the heat of sambal chile paste; bright notes of ginger, garlic, cilantro, and green onion; and the umami in oyster sauce and soy sauce play off each other effortlessly. It makes a fantastically festive presentation. Be sure to offer moist hand towels or paper napkins and a bowl for the shells. Traditionally, this Singapore-inspired dish is served with rice or baguette; so consider that option, too, to make a meal. This is messy eating, but worth it.

And for the drinking part? You’ll be doing plenty of that, trust us. With its spice, ocean airs, and power to ignite loud conversation (the good kind), chile crab begs for beer—big bottles of it. But while conventional wisdom would have you pairing this with light rice lager, mild hefeweizen, pale bock, and lighter saison, we recommend a tangy, potent, dry West Coast IPA, with juicy, citric hops that contrast the slightly sweet, miso-like flavor of the sauce; or even a double (a.k.a. Imperial) IPA, which amps up the alcohol, bitterness, mouthfeel, and fruitiness all around.
