Preheat the oven to 180C/gas mark 4. Mix the macadamia nuts, coconut, brown Xylitol and salt together and then blitz to breadcrumb consistency. Line a 9-inch tin with baking paper and then press the nut mix into the bottom. Bake in the oven for 15-20 minutes until golden and set. Take out and cool. Then take a large bowl and combine the cream cheese, butter, cornflour and sweetener together until smooth. Add the eggs one by one, beating in between, then finally add the cream, vanilla and lemon juice.

Pour the mix into the cake tin and wrap the OUTSIDE of the tin with foil. Place into a deep baking or roasting tray and pour hot water in around the tray and place in the oven. Bake for 40 minutes until set and golden. Then take out of the oven and the pan of water, and cool completely. I tend to make this cake a day before eating.
