Instructions:

Fill large-sized bowl with filtered water. Slice two lemons into halves. Squeeze 1 & 1/2 lemons’ juice into water in bowl. Drop skins in water, as well. This water will be used to soak artichokes, after prepared, so they don’t become discolored.

Peel outer leaves off one artichoke till you reach soft, center leaves. Remove the heart’s outer skin – it’s tough – and stem. Rub with last lemon half.

Slice off remainder of soft artichoke leaves from halfway on up. Scoop out the center “choke”. Place artichoke in lemon water prepared above. Prepare remainder of artichokes in the same manner and add them to lemon water.

Crush cloves of garlic. Add 1 pinch salt. Grind into paste form. Add most of herbs, saving a few to garnish. Grind quickly, forming rough paste.

Cut artichokes in quarters. Marinate in garlic-herb paste.

Place artichokes in large pan. Add oil and white wine. Squeeze in juice from last 1/2 fresh lemon. Simmer till tender, 10 to 15 minutes. Remove from heat. Allow to cool in their liquid.

Sprinkle with sea salt, ground pepper and remainder of herbs. Serve.
