Scrape the dough out of the mixing bowl and get a little flour on it so you can handle it without it sticking to you or the work area. Put a little oil on a large knife so it won’t stick to the dough, and cut the dough into 3 equal pieces. You can weigh it or eyeball it. Work with the dough balls one at a time.
This recipe should make you about 24-30 buns, and you may not need that many, so you can leave one of the dough balls intact and bake bread with it – and it’s amazingly good.
Now take one dough ball and cut it into 8 pieces as follows: slice through it one vertically and once horizontally; that makes 4 pieces. Then cut each of those pieces in half and that’s 8. Now, carefully knead or roll each one into a ball. It should be about 2 ½ inches in diameter so that it will rise and bake into a 3 ½ inch hamburger bun – which is a large bun. If you want smaller buns - and who doesn’t these days – just cut a little off until it’s about 25% LESS than the size you want for the bun. If they come out a little larger or bigger, that’s okay; just make the burgers that size. Once you have the right size, you can weigh it and then just make all the rolls in the next dough batch that weight.
