Flounder is a firm fish that holds up to this lemon and margarine sauce. I like to use Smart Balance or Earth Balance for my margarine in this recipe.

These lemon potatoes have an amazing contrast of flavors. The creamy roasted potatoes are enriched with margarine and then sprinkled with lemon juice. They are cooked until they have a rich roasted crust and a tender silky interior. Make sure to add the lemon juice after they are roasted or the lemon tends to turn bitter.

Brussels sprouts are a cabbage-like vegetable. They are sautéed with shallots until they begin to brown, and are then simmered gently in vegetable broth until they are tender. The combination creates a very lovely mild flavor.
