Pork with Strawberry and Mustard Sauce

Tender pork in a jammy sauce with a mustard kick is a perfect weekend meal.

Servings: 4

Total Time: 5mins

Ingredients:

2 (¾ pound) pork tenderloins

1 tbsp extra-virgin olive oil

Salt and black pepper

2 tbsp unsalted butter

1 shallot (minced)

¾ cup chicken stock

2 tbsp strawberry jam

1 tsp chopped thyme (chopped)

1 tsp Dijon mustard

Directions:

1. Cut each of the tenderloins, crosswise into 4 pieces and using a meat mallet, pound to around 1” thick.

2. In a skillet, heat the olive oil. Season the meat with salt and pepper and over high heat, cook, flipping over once, until cooked through and gently browned. Transfer the cooked pork to a plate and loosely tent with aluminum foil.

3. In the skillet, over moderate heat, melt 1 tbsp of butter.

4. Add the shallot and cook, while stirring until soft. Next, add the chicken stock followed by the strawberry jam and thyme and over high heat, cook, and stir until the mixture thickens.

5. Whisk in the Dijon mustard and reduce the heat to low while whisking in the remaining 1 tablespoon of butter.

6. Season to taste.

7. Return the meat along with its juices to the skillet, flip over once to evenly coat in the sauce. Serve!
