Your Four-Week Plan for Celiac Sprue
While your disease may be more complicated than other problems outlined in this book, your solution is going to be relatively straight-forward. If you have been diagnosed with celiac sprue, we already know that gluten is your problem. This means that you can forgo much of the experimental “ABAB” period during weeks three and four. Instead, you can begin to explore your new food guidelines and learn about the hidden sources of gluten.
The only treatment for celiac sprue is to follow a gluten-free diet. This demands constant attentiveness, since gluten is hidden in many foods that you would probably not suspect, including additives such as modified food starch, preservatives, and stabilizers. Because some vitamins and medications also contain gluten, as do many bottled sauces and condiments, it is incumbent on you to scrutinize labels and to seek guidance from a registered dietitian or nutritionist regarding your food and supplement choices. Use Table 6.1 and the companion notes in Tables 6.2, 6.3, and 6.4 as your reference lists of safe, questionable, and forbidden foods, and do not neglect to alert restaurant staff or anyone else who prepares food for you of your gluten intolerance.
As a first step, train your sights on constructing your diet with plain meat, poultry, fish, rice, and fresh fruits and vegetables. As you bid good-bye to forbidden foods—such as wheat, rye, barley, triticale, spelt, bulgur, and other gluten-rich flours—you make way for some new and versatile gluten-free flours, including teff, amaranth, arrowroot, buckwheat, corn, millet, tapioca, potato, and bean flours. There are now many celiac websites offering a multitude of recipes, as well as “safe” flours and other food products for sale. You also might want to join a celiac support group, since making a wide-ranging change to your eating habits on your own can be daunting. Many people with celiac invest in a bread machine and make delicious, gluten-free breads at home. So, that aroma of freshly baked bread, muffins, or pancakes can still tantalize you—but safely!
