Cauliflower makes a great a“ rice.” Break off the florets, chop them into rice-sized bits in a food processor, and microwave for 3 minutes. One of my favorite meals is bacon and sauté d mushrooms over cauliflower rice.

Coconut flour is my favorite of the grain-free flours for the occasional baked treats. I make a tasty banana bread using this recipe . . .
Mix in bowl: 2 mashed bananas, 1/3 cup melted butter, 6 eggs. Add 1 teaspoon vanilla, 1/2 cup coconut flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 1/2 teaspoon salt, and 1 tablespoon cinnamon. Add 1/3 cup pecan pieces if desired. Mix well. Pour batter into bread pan (greased with coconut oil), and bake for 45 minutes at 350 degrees.
