SIMPLEST BBQ CHICKEN

4 to 6 boneless, skinless chicken breasts*

thyme or tarragon

BBQ sauce, any variety

salt and pepper, to taste

Table 53: * A whole chicken, cut and quartered, can also be used. Grill 30–40 minutes.

Grill chicken 20–30 minutes over medium-low heat, turning frequently, until done. To check for doneness, squeeze chicken to see if juices run clear. If you aren’t satisfied, cut open to check. Sprinkle a light coating of thyme or tarragon over chicken. Baste with BBQ sauce during the last 5 minutes of grilling, turning every 1–2 minutes. Season with salt and pepper. Serve chicken as desired. Great on Caesar salads. Makes 4–6 servings.
