1. Heat the oil in a medium-size pot. Sauté the onions and garlic in the oil until the onions turn lightly golden. Add the mushrooms and wine, cover, and cook until the mushrooms soften. Stir occasionally.
2. Add the remaining ingredients except the pasta. Cover and simmer for 1 hour. Taste and adjust the pepper if desired.
3. Meanwhile, heat a large pot of water to boiling. About 10 minutes before serving, begin to cook the pasta. When cooked to desired consistency, drain, top with the sauce, and serve immediately.
