Cream Cheese Pancakes

Enjoy as an appetizer, light meal or even for breakfast with a side of bacon. If you aren’t a fan of cream cheese – experiment!

Portions: 4

Prep Time: 2mins

Total Time: 10mins

Ingredients:

• 2 ounces of cream cheese

• 2 eggs

• ½ tsp of cinnamon

Directions:

1. In a blender of choice, combine all the ingredients and blitz until smooth. Allow to rest for a couple of minutes to let the bubbles settle.

2. Pour ¼ of the batter mixture into a skillet, greased with butter. Cook on medium to high heat for approx. 2 minutes, or until golden brown. Flip the pancakes over and cook on the reverse side. Repeat the process until all of the pancake mixtures has been used.

3. Enjoy warm.
