Cachaça is traveling beyond Brazilian shores—Billy Tran at the Prescription Cocktail Club in Paris used it to great effect in this drink.

COUPE

1 strawberry

1 1/2fl oz/40ml Engenho da Vertente cachaça

3 tsp lime juice

1 tsp Belvoir Raspberry & Rose Cordial

3 tsp passion fruit syrup

ice cubes

champagne to top

Muddle the strawberry in a shaker, add the next four ingredients, and shake hard with ice. Double strain into a glass and top off with champagne.

Saint Paul’s Cocktail

I once judged a cachaça cocktail competition where I had to sample 40 drinks in an hour. This was one of the winners, I think. It was created by Alex Kratena of the Artesian Bar at Langham’s Hotel, London.

MARTINI

1 3/4fl oz/50ml Cabana cachaça

1fl oz/25ml Tio Pepe Palomino Fino sherry

2 dashes Fee Brothers orange bitters

2 tsp lime juice

2 tsp agave syrup

ice cubes

LIME ZEST TWIST

Shake all the ingredients with ice, double strain into a glass, and garnish with a lime zest twist.
