BITTERS

While they may look like the work of witchcraft and hocus-pocus, there is no great mystery to bitters. They are essentially bitter and aromatic herbs and spices, tinctured in high-proof spirits.

Standard bitters will use roots, bark, and/or leaves as the bittering agent, with aromatic herbs and spices providing flavor and any medicinal properties. The list of bittering agents should make up no more than half of the ingredients, which means there is plenty of scope to add flavor with fruits, herbs, spices, flowers, and nuts. It is really important to use a high-proof alcohol to extract the flavors and properties from each ingredient and also to preserve the shelf life of the bitters. For those reasons, choose one that is at least 100 proof or 50% ABV (alcohol by volume).
