Here’s a classic example of how tasting a blend neat only gives you a partial picture of its true personality. When Mr Hankey’s quaking and naked you get nuttiness, clotted cream, and fruit cake. Though it opens slightly with water, it’s best to dive in with soda, which has a transformative effect, shedding the nutshell and allowing estery grassiness to link with the toffee core. Ginger ale latches on to the citrus and is a sound mix, and though green tea is pretty simple, when mixed with cola there’s a lovely cherry note and a reduction in sweetness. The blend allows coconut water to take charge, but adds a pleasant nuttiness to the finish. You see? Mixing is essential.
