Quercus alba: White Oak

White oak from the forests of Missouri and Arkansas makes up the lion’s share of bourbon barrels. It grows relatively straight and clean, with few branches in the first 20 feet (6.1 m). The cellular structure is fairly loose, but with the effect of the tyloses and the quarter-sawing technique that cuts across the growth rings to take the most advantage of that effect, white oak will make a watertight barrel.
