All You Need Is...

2 duck legs

½ cucumber, deseeded

6 spring onions, trimmed

1 x 75g bag watercress

8 medium tortilla wraps or flatbreads

Hoisin sauce, to serve

All You Do Is...

1 Preheat the oven to 220°C (fan), 240°C, gas mark 9. Pat the duck skin dry with kitchen paper. Scrunch up a large piece of foil, put in the middle of an oven tray as a platform and pop the duck legs on top, then grind over a little salt. Roast for 1 hour till the meat falls off the bone and the skin is crispy; set aside.

2 Meanwhile, slice the cucumber and spring onions into matchsticks. Roughly chop the watercress then when the duck is slightly cooled strip the meat and crispy skin off the bones into small shredded pieces.

3 Put the wraps in foil and pop in the oven to gently warm through. To serve, just lay out all the ingredients on a platter and let everyone make their own. A teaspoon of Hoisin sauce spread over the wrap, followed by a little of everything else.
