For the Cassoulet

12 to 14 ounces smoked mild turkey sausage, such as kielbasa

4 tablespoons extra-virgin olive oil, divided, plus additional as needed

1 large yellow onion, ½ inch diced (about 2 cups)

4 sprigs fresh thyme, tied into a bundle with kitchen twine, plus 2 teaspoons chopped, divided

1 teaspoon smoked paprika

¾ teaspoon kosher salt

½ teaspoon ground black pepper

3 garlic cloves, minced (about 1 tablespoon)

2 tablespoons tomato paste

1½ cups low-sodium chicken broth, plus additional as needed

2 (15-ounce) cans reduced-sodium white beans, such as great northern or cannellini, rinsed and drained

1 cup panko bread crumbs
