Instructions:

1. Place the potatoes in a large pan of boiling, salted water.

2. Cover. Simmer for 8-10 minutes, until potatoes are tender.

3. Drain. Allow potatoes to cool down a bit.

4. Mix tuna with parsley, sour cream and sweet corn. Cook on med. heat for three to four minutes.

5. Place 1/2 potatoes on base of oven-proof casserole dish.

6. Pour tuna mixture over the potatoes.

7. Place the rest of the potatoes over the top of the tuna mixture.

8. Sprinkle with cheese. Place casserole dish under hot grill for two to three minutes. Top should be golden brown. Serve alongside a salad.
