How to enjoy green tea

Brewing green tea

The key to brewing green tea is to use a fresh water, preferably a spring water, because it should have some minerals, and to bring the water to 160ºF to 170ºF, but not higher. Steep the leaves for a short time (a minute) for a less bitter brew. High quality loose leaves can be steeped multiple times, and with each steeping you will get a different flavor profile. First you will get mainly the “green” compounds. By the second steep, the catechins will start coming out and the tea will start to be bitter, but you will also start to get the more floral compounds. With each subsequent steep, the profile will change until you finally get a very weak brew with little flavor. That’s certainly when you should stop!

Once you have gone through this process with your choice of green tea, you will have an idea of what you prefer, and then you should go with it. Unlike the case with wines, there is no absolutely correct way to enjoy tea! No snobbery allowed!
