Dr. Weil, with his Santa Claus–esque beard, is all about an anti-inflammatory diet. His recommendations are pretty measured and sensible, if a bit austere, and pretty similar to food guru Michael Pollan’s: Eat your veggies, and try not to overdo it on the dense, calorie-rich stuff. So balanced! So boring! Well, if you’re going to be eating a lot of fish full of healthy oils, vegetables, and grain salads, a tart Sauvignon Blanc is just the thing. New Zealand Sauvignon Blanc is going to be too overwhelmingly pungent—you need bolder food for that stuff. Something from the Loire Valley, with just the right touch of grassiness and refreshing citrus, is what you want. Look for lesser-known appellations like Touraine and Menetou-Salon on the label for a good value below $20.
But is it Paleo? As obnoxious as the whole Paleo/Crossfit subculture has become, the general idea of eating mostly whole foods and avoiding processed ones is pretty sane. Some of those strange, date-based “blondies” look disgusting, and some schools of Paleo thought eschew drinking altogether, but those people are crazy and we’re not concerned with them here, obviously. What we are concerned about is this: What are you going to drink with all that bacon?
Choosing a big-gun red for steak is easy, but for bacon and other delicious, fatty pork products, you’ll want something that cuts through all that richness. A dry Gewürztraminer will pick up any spice notes in the bacon or sausage you’re noshing on, and will do such a great job of cutting through all that fat and smoke that you won’t even miss that dinner roll. OK, you’ll probably still miss the dinner roll, but Oregon’s Brandborg makes a fantastic Gewürztraminer that feels light and refreshing on your palate, and is filled with classic Gewürz flavors of lychees, rose petals, and a hint of clove.
