MAKES 6 SERVINGS
1 cup plus 5 teaspoons heavy cream, cold
2 tablespoons sour cream, cold
2 tablespoons powdered sugar
1 tablespoon lemon juice
10.5 ounces blue gelatin dessert powder
ALSO REQUIRED
Pastry bag
6 tall serving glasses

1. Combine the heavy cream and sour cream in a medium bowl and beat with an electric mixer until the mixture has thickened noticeably. Add the powdered sugar and lemon juice and continue beating until stiff peaks form. Cover with plastic wrap and refrigerate for 3 hours. Stir again to combine before using.
2. Fill a pastry bag with the cream and squeeze cloud shapes (see image) onto the insides of six tall glasses. Proceed gradually, allowing the cream to dry before turning the glass a bit to create the next clouds. Continue in this way, decorating all of the glasses with clouds of cream.
3. Meanwhile, prepare the gelatin dessert according to the instructions on the package. In most cases, this involves bringing 2 ¼ cups of water to a boil in a pot. Then add the powder, adjust the heat to low, and continue stirring until the powder has dissolved completely.
4. Transfer the mixture to a bowl and refrigerate for about 10 to 20 minutes so that it sets but not so much that it doesnât flow!
5. Carefully pour the cooled gelatin through a funnel into the prepared glasses. Gradually fill the glasses almost to the brim, then chill for at least 1 hour. Refrigerate until consumed.
