Here’s a secret—“chalkboard” fondant is just black fondant with a dusting of confectioners’ sugar. The key, though, is having chalk that is edible but can still write with a lot of pigment. Of course, you can do this on a one-tier cake for ease, but assembling it in a fancy cake fashion makes it particularly impressive. The white chocolate buttercream filling is tinted a trio of pastel shades to add contrast and visual appeal. The short layer is simply a fondant-covered riser included to add interest because the cake is so much of one solid color.
