Double Trouble
Weâre back in the kitchen, cooking up a storm, when a cough comes from the doorway. âChef, sorry to disturb you,â says Albert, the only staff member of mine who didnât quit and was lucky to have weeks of paid vacation. âIâm here for my check and wanted to know when youâre reopening.â
âRight, right, right,â I say, looking at Charles. I have no clue. âWhatâs the plan?â
âIn a week,â says Charles.
âGénial,â says Albert. âHave you hired a new staff, or are the others coming back?â
My face pales. âI . . . no, theyâre not.â
Albert shuffles his feet. âI was wondering if I could be a server instead of a busboy and dishwasher. I donât have much experience, but Iâm a quick learner. And I know the ordering and reservations systems.â
âSure, sure, sure,â I say, rubbing my temples with my fingertips.
âThanks, Chef,â says Albert. âJust let me know when the reopening is scheduled and Iâll be here.â
He bounds out of the kitchen, leaving me to face Charles, his arms crossed over his chest.
âKate, you donât have a full staff?â he asks, and I shake my head. âNo hostess? No bartender? No servers? No line cooks?â
I want to crawl into the walk-in cooler and lock myself in it. âEverybody but Albert quit.â
He clicks his tongue, a tsk, tsk, tsk. âThis is serious, Kate.â
âI know,â I say, shuddering because heâs right. âI thought Oded and I could handle everything for the time being. What with no customers.â
âWeâre in a new situation now. And we have to be prepared for it.â
I catch my breath. He said we. And damn. An idea comes to mind. Why didnât I think of this before? I prop my elbows on the prep table, raise a brow.
âIâll see if Le Cordon Bleu has any recent graduates who want to come into the kitchen, maybe a few of them wouldnât mind starting out as servers or roustabouts. All the people weâll call in will be stagiaires. Theyâll practically work for free.â
He eyes me warily. âGood idea,â he says, and by the nod of his head, I think heâs more impressed with me. Iâm not the lackey he initially thought I was with a mishmash menu and no staff.
âCan we postpone the opening?â
âNo,â he says. âMy mother has already sent out the invitations. With this list of hers, thereâs no backing down now.â
âThatâs right,â says Garrance.
âWeâll help,â says my mom.
Charles and I shoot each other shocked looks, our eyes darting back and forth.
Both of our mothers stand in the doorway, and I have no idea for how long. Or why theyâve been spending so much time together. And why they have such large shopping bags set at their feet.
âIâll be an interim hostess until you find somebody more suitable,â says Garrance. âI only have to attend a few board meetings for Tenang, and Iâm not one to look down on hard work.â
âAnd Iâll tend the bar,â says my mom. âI had so much fun with our experiments.â She points, her gaze darting between Charles and me.
