Roast Feast

Colossal beef pot roast with potatoes, onions and cabbage in a zesty gravy

Feast your eyes and your taste buds on this! It’s the roast with the most—the most delectable flavor, the most tasty roasted veggies ever and the most eye-appealing, mouthwatering platter ever to be served to a hungry crowd. Beauty and a feast!

1 boneless top sirloin roast (4 lbs/1.8 kg)

1 tsp salt

1 tbsp all-purpose flour

2 tsp olive oil

1½ cups each barbecue sauce and low-sodium beef broth

¼ cup Worcestershire sauce

2 tbsp freshly squeezed lime juice

1 tbsp minced garlic

1 tsp dry mustard

¼ tsp freshly ground black pepper

2 small heads cabbage, each cut into 4 to 6 wedges

25 pearl onions, peeled

4 medium white potatoes, peeled and cut in half lengthwise

4 medium sweet potatoes, peeled and cut in half lengthwise

• Preheat oven to 350°F.

• Sprinkle roast lightly on all sides with salt and flour. Heat oil in large non-stick skillet over medium-high heat. Add roast and brown on all sides. Remove roast from skillet and place in a large roasting pan.

• In a medium bowl, combine barbecue sauce, broth, Worcestershire sauce, lime juice, garlic, dry mustard and black pepper. Mix well. Pour over roast. Cover and cook for 1 hour. Reduce heat to 325°F and cook 1 more hour. Baste roast with sauce every ½ hour.

• Remove roasting pan from oven. Arrange vegetables around roast, starting with cabbage, followed by onions, white potatoes and sweet potatoes. Baste roast and vegetables with sauce. Cover, return to oven and cook for 1 more hour (total cooking time for roast: 3 hours).

• Remove roast from oven. Allow to stand 15 minutes before carving. Slice roast thinly. Arrange slices on a serving platter and surround roast with vegetables. Pour off as much fat as possible from sauce in pan. Pour ½ cup sauce over meat and serve immediately.

PER SERVING 491 calories, 11.5 g total fat (3.2 g saturated fat), 55 g protein, 41 g carbohydrate, 8.9 g fiber, 139 mg cholesterol, 816 mg sodium
