spoon. When the whiskey has reduced by about half, add the tomato paste and thyme, and cook, stirring constantly, about 1 minute. Return the beef to the pot and add the stock, bay leaf, sugar, 1 teaspoon of salt, and ½ teaspoon of black pepper. The meat should be just covered with liquid. If not, add additional stock until covered. Bring to a boil, then cover the pot and transfer to the oven. Cook until the meat is tender, or about 2 hours, stirring occasionally.

4 Serve warm, ladled into bowls.
