This is my version of the classic fave Mai Tai and is a really fun way to introduce beer to friends who may not necessarily drink it. In fact, I’d even go so far as to say this is just silly fun but, in my opinion, that’s never a bad thing to embrace in life!

Serves 1

1 teaspoon sugar

1 fresh kaffir lime leaf

2 teaspoons ginger liqueur (I use King’s Ginger)

50 ml (2 fl oz/¼ cup) vodka (you could use chilli vodka, preferably home-made)

juice of ½ lime

330 ml (11 fl oz/1⅓ cups) cold Thai-flavoured beer such as Two Chefs White Mamba

In a shaker, muddle the sugar and the lime leaf together until you can really smell the aromatics, then put in a shaker with some ice and all the other ingredients apart from the beer and shake for 30 seconds.

Strain into a tall glass and top up with the beer.
