1. Lay your flanken on a plate. Mix together the steak seasoning and 1 teaspoon of the erythritol blend, and sprinkle both sides of the meat with it. Let that sit while you make the marinade.
2. Mix together the soy sauce, rice vinegar, maple extract, if using, red pepper flakes, ginger, sesame oil, and remaining 21/2 teaspoons of the erythritol blend. This is your marinade.
3. Put your flanken in a resealable plastic bag and pour in the marinade. Seal the bag, pressing out the air as you go, and turn the bag to make sure the meat is coated on all sides. Throw them in the fridge and let them sit until suppertime, at least 1 hour or up to 8 hours.
4. Cooking time is here! Get going whatever sort of grill you’ve got to medium-high heat, or when the coals are well-ashed. When it’s ready, drain the flanken and grill just 2 to 3 minutes per side, until done to your liking. No grill? You can broil these close to the flame for 4 to 6 minutes per side. Done!
