Short on time this evening? Tray bakes are so easy to put together: they require only minimum prep, and this one takes barely more than half an hour in the oven. My homemade Spicy Harissa Butter is the perfect flavor booster for the roasted vegetables and tender fish in this Moroccan-inspired, one-pan meal.
1 recipe (160 g/5.6 oz) Spicy Harissa Butter
1 pack (200 g/7.1 oz) fresh spinach or chard
1 medium (300 g/10.6 oz) eggplant, roughly chopped
1 medium (400 g/14.1 oz) cauliflower, sliced
1 medium (110 g/3.9 oz) white onion, sliced
4 medium (300 g/10.6 oz) tomatoes, chopped
2 tablespoons (8 g/0.3 oz) chopped fresh parsley or cilantro
6 boneless (540 g/1.2 lb) sea bass fillets
Salt and pepper, to taste
3 tablespoons (45 ml) extra-virgin olive oil
Melt the harissa butter in a small saucepan. Preheat the oven to 400°F (200°C, or gas mark 6).
Place the spinach into a baking dish large enough to hold all of the ingredients. Top with the eggplant, cauliflower, onion, tomatoes, and parsley (reserve some parsley for garnish). Drizzle with half the melted butter, place in the oven, and bake for about 20 minutes. Then add the sea bass fillets skin-side up, and drizzle them with the remaining butter.
Bake for 12 to 15 minutes. Garnish with the reserved parsley, and season with salt and pepper to taste. Drizzle with the olive oil and serve, or let cool and refrigerate for up to 4 days.
