Directions:
1. In a 12" skillet or frying pan, over low heat, heat 2 tablespoons of olive oil.
2. Increase the heat to moderate to high, and once the oil begins to smoke, add the onion along with the crab and while frequently stirring, cook for 4-6 minutes, or until golden.
3. Transfer the crab mixture to a bowl and set aside.
4. Toss the diced potatoes with the remaining oil.
5. Add the potatoes to the 12” skillet or frying pan and while occasionally stirring cook, for 10 minutes, until they have a golden crust.
6. While the potatoes cook, in a bowl, combine the ketchup with the mustard, Old Bay seasoning, basil, and 2 tablespoons of water.
7. Return the crab mixture set aside in Step 3 to the skillet. Add the ketchup mixture and stir to combine.
8. Season with salt and black pepper and continue to cook while frequently stirring until the hash is browned; this will take approximately 5 minutes.
9. Serve topped with poached or fried eggs.
