IRISH WHISKEY

A great friend neat or mixed. Some brands, Jameson’s especially, have an almost bourbon-like sweetness, which makes them great in cocktails. Try making a heretical Mint Julep with Bushmills Black Bush. But the real glory of Irish whiskey is their pot-still whiskies. Like single malt scotch, these are distilled in a traditional still, but from a mixture of malted and unmalted barley, and usually distilled three times rather than twice as is normal in Scotland. The result is an amazing creamy texture and spicy character that is like nothing else. Most Irish whiskies are blends, with some pot-still spirit, but look for all-pot-still releases, such as Redbreast 12-year-old or Green Spot, or ones with a high pot-still content, such as Powers Gold Label 12-year-old reserve, which is good enough to make a Scotsman weep.
