Directions:
For the salad: Add the red onion to a large salad bowl.
Squeeze the lime juice over the onion and season with salt and black pepper. Mix to combine and soften the flavor of the red onions.
Add the cucumber followed by the tomatoes and mix to incorporate. Set the salad aside.
When you are ready to serve, drizzle with oil, scatter over the feta cheese and garnish with coriander.
For the burgers: With your grill rack in place, preheat your grill to moderate-high heat.
Add the turkey mince, harissa, and garlic to a mixing bowl and using clean hands, combine the mixture. Shape the mixture into 4 pattie shapes and place them on the preheated grill rack.
Grill the turkey patties for 8 minutes before flipping over and grilling for an additional 7 minutes, until the burgers are cooked through.
When the burgers register an internal temperature of 165 degrees F, put them in the burger buns. Top with a lettuce leaf and serve with the salad. Don’t’ forget to add the feta crumbles and garnish!
