Gypsy Gourmet

For a little more kick in the dressing, add:

½ teaspoon powdered clove

2 tablespoons horseradish

¼ cup raisins or golden raisins

¼ cup chopped nuts, such as walnut or pecan

Serves 6–8

1 medium head cabbage, shredded (5–6 cups)

2 apples, preferably Granny Smith

½ cup cider vinegar

¼ cup oil

1½ teaspoons salt

1 medium jalapeño, stem removed, or a few dashes of hot sauce

¼ cup sugar

½ teaspoon cinnamon

1 teaspoon pepper

1. In a large bowl, shred the cabbage (it should yield 5–6 cups). Then core and cut the apples into matchstick slices or cubes and add to bowl.

2. Purée the vinegar, oil, salt, jalapeño, sugar, cinnamon, and pepper in a blender. Add to cabbage-and-apple mixture. Chill and serve.
