Beet Chiller

YIELDS 2 CUPS

Vibrant purple beets are valuable both for their colorful roots and their nutritious green leaves. Closely related to Swiss chard, these earthy vegetables are an excellent source of B vitamins and minerals, including iron, copper, manganese, and magnesium. Beets are also a very good source of potassium, which lowers heart rate while regulating metabolism at a cellular level.

1 CUP WATER

1 BEET, PEELED AND CUT INTO ½-INCH CHUNKS

1 CARROT, PEELED AND SLICED THINLY

1 CUCUMBER, UNPEELED, WELL WASHED, AND SLICED

2 STALKS CELERY, LONG FIBERS REMOVED, CHOPPED

1 CUP CHOPPED BABY BOK CHOY

6 ICE CUBES

Blend all ingredients together, adding more water if needed, then pour into a glass and enjoy. To minimize staining on your hands, peel the beet under running water or wear a pair of protective food-grade gloves. Protect your cutting board from the beet’s bright red juice by covering it with parchment paper.
