/koo-NAH-fah/ Like many Palestinian sweet treats, kunafa or kunafeh is eye-catching and super-sugary with a savory twist. This breakfast or dessert has a shredded-wheat texture, which you will notice with every bite. When made with long, thin noodles, it is knishnah; with coarsely ground semolina flour, it is na’ama; when made with both, it is mhayara. It is typically layered with soft cheese, then soaked with sugar syrup and topped with crushed pistachios. The traditional Palestinian additions of fragrant rosewater or orange blossom water often flavor the syrup. The top layer of pastry may be colored a vibrant orange. Keep an eye out for Turkish künefe and Greek kadaif variations.
