Corn Chip and Chili Casserole

Corn chips are salty, so consider using a reduced- or low-sodium chili in this recipe.

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients

Serves 4–8

3 cups corn chips, divided

1 large yellow onion, peeled and chopped

1 cup grated American cheese, divided

4 cups Texas Red Chili (Chapter 5) or 1 (19-ounce) can beef chili

Heat oven to 350°F.

Lightly spray a 6- or 8-quart Dutch oven with nonstick cooking spray. Spread 2 cups corn chips over the bottom of the pan. Distribute onion and 1⁄2 cup cheese over the top of corn chips, and then top with chili.

Add remaining corn chips and cheese over the top of chili.

Bake 15–20 minutes, or until casserole is heated through and cheese is melted.
