The window for harvest varies by around 6 to 8 weeks by location and cultivar in question, so it is important to learn to recognize when a good window for harvest has arrived in your area. Also, some of the most commonly mistaken plants have very different life cycles than elderberry, so knowing the elder’s general habit in your area helps ensure you won’t forage the wrong food!

For example, on our farm, a few groups ripen 2 to 4 weeks before the others. The native plants tend to ripen another week or so after our later groups. Also note, a particular mild winter and spring may shift your usual harvesting and foraging windows. As I sit here typing, our bushes are already in budbreak the first week of March because of a mild late January and February. This may well shift out harvest 2 or 3 weeks this year! So it is best to check on your bushes throughout the season, especially during atypical years.
