HEARTY LENTIL AND MUSHROOM SOUP

PEGAN DIET

Here is a classic lentil soup with a twist: cremini mushrooms make the protein-rich soup even heartier and give it a deep, meaty flavor. Leftovers keep well, so make a double batch and enjoy the soup over the course of a week.

Serves: 4

Prep time: 20 minutes, plus soaking time

Cook time: 1¾ hours

300 g green lentils

2 tablespoons Ghee (here)

1 large onion, roughly chopped

300 g thinly sliced cremini mushrooms

3 celery sticks, cut into 1-cm pieces

2 large carrots, scrubbed and cut into 5-mm rounds

1 litre Dr. Hyman’s Veggie-Bone Broth (here) or filtered water

30 g dulse flakes

2 bay leaves

2 teaspoons garlic powder

leaves from a 15-cm rosemary sprig, finely chopped

1 teaspoon dried basil

½ teaspoon freshly ground black pepper, or to taste

½ bunch parsley, stemmed and roughly chopped
