SPICY SMOKED TOFU BURGERS

WITH CORIANDER ROAST SQUASH AND AVOCADO PURÉE

FOR THE TOFU BURGERS: 1 onion, roughly chopped ~ 1 clove garlic, chopped ~ 1 chili, chopped ~ 1 medium carrot, peeled and finely grated ~ 1 cup canned red kidney beans ~ 6 oz firm smoked tofu, drained ~ 1 tsp sweet paprika ~ 1 tsp ground coriander ~ 1 tbsp sesame seeds ~ handful of flat-leaf parsley, finely chopped ~ 2 tsp vegetable stock powder ~ 2 tsp cornstarch ~ 1 egg, beaten FOR THE CORIANDER ROAST SQUASH: 1 butternut squash, peeled and roughly chopped ~ 2 tbsp olive oil ~ 1 tbsp lightly crushed coriander seeds ~ 2 cloves garlic, crushed ~ 2 dried bird’s-eye chilis, crushed ~ ½ tsp salt ~ pepper FOR THE AVOCADO PURÉE: 2 ripe avocados ~ 2 scallions, finely chopped ~ good pinch of sea salt ~ glug of extra virgin olive oil ~ 2 tbsp water TO SERVE: burger buns
