Instructions:

1. Preheat the main oven to 400 degrees F.

2. Lightly grease four small baking dishes. Set to one side.

3. Add the potatoes to a pan of boiling, salted water and cook for several minutes, drain and set to one side.

4. In a pan, over moderately high heat, melt the butter.

5. Add the onions and sauté with the garlic for 4-6 minutes.

6. Pour in the heavy cream and add the fish bouillon and seasoning, bring to boil, before reducing to low heat and allowing to simmer for 5 minutes. Allow to cool and add the beaten egg.

7. Season the catfish with paprika, cumin, salt and black pepper.

8. When you are ready to serve, assemble the pie by arranging a layer of potatoes on the bottom of each small baking dish.

9. Add approximately 2 tablespoons of the cream mixture on top.

10. Arrange a catfish fillet on top of the potato and top with an additional layer of potato along with 2 tablespoons of the heavy cream mix.

11. Scatter breadcrumbs and grated Parmesan over the top and bake in the oven for just under half an hour, or until cooked through.

12. Garnish with chives and enjoy.
