INGREDIENTS

— 2 gelatin sheets

— 200 ml (6¾ oz) cranberry juice

— 100 ml (3⅓ oz) citrus vodka

— 75 ml (2½ oz) triple sec

— 75 ml (2½ oz) egg white

— 20 ml (⅔ oz) fresh lime juice

— 20 ml (⅔ oz) lime cordial

— 10 ml (2 tsp) orange bitters

— 50 ml (1⅔ oz) sugar syrup

TO SERVE

— Paper ice-cream cones and plastic ice-cream spoons

1. Add the gelatin sheets to the cranberry juice and heat in a pan until 80°C (176°F) and the gelatin has completely dissolved. Remove from the heat and wait until cool, then combine all the ingredients and place them in an ISI siphon.

2. Charge the siphon with two N2O cartridges and place in the fridge to cool for an hour.

3. Pour some of the liquid nitrogen into a large, stainless-steel, insulated bowl. Remove the siphon from the fridge and, from a safe distance, squirt the cosmo mix at regular intervals into the bowl of liquid nitrogen. Use a wire-mesh skimmer to scoop the popcorn out of the stainless-steel bowl. Repeat with more liquid nitrogen and more of the mix.

4. Scoop into paper ice-cream cones and serve with a flat plastic ice-cream spoon.
