Seafood Stew
In Italy, there is a place called Abruzzo, which is known for its spicy stew loaded with hot chili peppers and served with grilled bread on top.
Serving Size: 8
Preparation Cooking Time: 1 hour and 15 minutes
Ingredients:
• ¼ cup olive oil
• 1 onion, diced
• 4 cloves garlic, crushed and divided
• ¼ cup celery, diced
• ½ teaspoon red pepper flakes
• ¼ cup parsley, chopped
• ¾ cup dry white wine
• 3 sprigs fresh oregano
• 3 bay leaves
• 2 cups canned diced tomatoes
• 2 ½ cups seafood broth, divided
• 1 lb. mussels, scrubbed
• 2 lb. clams, scrubbed
• 1 lb. squid, sliced into rings
• 1 lb. white fish meat, sliced into small pieces
• 2 tablespoons freshly squeezed lemon juice
• 8 slices baguette
Instructions:
1. Pour the oil into your Dutch oven over medium low heat.
2. Add the onion, 3 garlic cloves, celery, red pepper flakes and parsley.
3. Cook for 15 minutes, stirring from time to time.
4. Increase heat and pour in the wine.
5. Cook for 1 minute.
6. Add the bay leaves and oregano.
7. Cook for 30 seconds.
8. Pour in the tomatoes and broth.
9. Bring to a boil.
10. Reduce heat.
11. Simmer for 20 minutes.
12. Add the mussels and clams.
13. Cook for 5 minutes.
14. Add the fish and squid.
15. Cook for 10 minutes.
16. Remove from the stove, then add the lemon juice.
17. Preheat your broiler.
18. Broil the bread for 2 minutes.
19. Rub both sides of the bread with the remaining clove of garlic.
20. Ladle the stew into soup bowls and top with the bread.
