FOODS TO GROW ON Lentils are the nutrition stars of the legume family—they have twice as much protein as many of their cousins, and also provide iron, phosphorus, calcium, and B vitamins such as niacin and folate.

Chicken for baby

When baby is first introduced to meats, mixing them with a fruit puree such as Plum Puree (see recipe) or Applesauce (see recipe); a vegetable puree such as mashed sweet potato (see recipe) or Butternut Squash Puree (see recipe); or a cooked grain such as Savory Brown Rice (see recipe), can make the texture more appealing.

Olive oil for greasing

½ lb (250 g) boneless, skinless chicken thighs or breasts

MAKES ABOUT 1¼ CUPS (8 OZ/250 G) CHICKEN

• Preheat the oven to 400?F (200?C). Line a small roasting pan with aluminum foil. Lightly oil a roasting rack and place it in the prepared pan. Place the chicken on the rack and bake, turning once about halfway through the baking time, until opaque throughout and no longer pink in the center, about 30 minutes. Remove from the oven and let cool.

• Transfer the chicken to a cutting board and, using a sharp knife, cut the chicken across the grain into thin slices, then mince the slices into very small pieces. Depending on your baby’s age and chewing ability, you can transfer the chicken to a food processor or blender and pulse just until the texture resembles small crumbs; add a little water if needed to moisten.

STORE IT Refrigerate in an airtight container for up to 2 days, or spoon individual portions into ice-cube trays or other baby-food freezer containers and freeze, covered, for up to 1 month.
