TOMATO AND BASIL DIP

SERVES 8–12

1 tablespoon olive oil

1 onion, finely chopped

2 garlic cloves, chopped

400g (14oz) can chopped tomatoes

1 tablespoon tomato purée

1 teaspoon dried oregano

a handful of basil leaves, torn into small pieces

sea salt flakes and freshly ground black pepper

Heat the olive oil in a saucepan over a medium heat, add the onion and cook until soft. Add the garlic and cook for another couple of minutes or so, then add the tomatoes. Stir in the tomato purée and oregano, and season with salt and pepper. Cook until the sauce is thick and reduced.

Stir in the basil, then leave to cool completely before serving.
