Ingredients

4 small Yukon Gold potatoes, peeled and sliced into thin rounds

2 (2-ounce) pieces trimmed boneless pork loin, pounded flat

1 tablespoon fresh rosemary

1 ⁄2 teaspoon salt

1 ⁄4 teaspoon pepper

1 apple, peeled, cored, and sliced into thin rounds

4 dried apricot halves, finely chopped

1 tablespoon chopped red onion

1 ⁄8 cup apple cider

1 tablespoon olive oil

Preheat the oven to 350°F and spray a 9" × 13" casserole dish lightly with nonstick spray.

Layer half of the potato slices evenly over the bottom of the dish. Top with the flattened pork loins and sprinkle with the rosemary, salt, and pepper. Arrange the apple slices over the top of the loin and sprinkle the apricots and red onion over the apples. Layer the remaining potatoes on top. Drizzle the apple cider and olive oil over the top of the casserole.
