Pork Loin Casserole

Nothing says autumn so much as a dish like this. The apples, pork, and rosemary pair perfectly and the flavors heighten when cooked together in a casserole.

Serves 4

Ingredients

4 small Yukon Gold potatoes, peeled and sliced into thin rounds

2 (2-ounce) pieces trimmed boneless pork loin, pounded flat

1 tablespoon fresh rosemary

1⁄2 teaspoon salt

1⁄4 teaspoon pepper

1 apple, peeled, cored, and sliced into thin rounds

4 dried apricot halves, finely chopped

1 tablespoon chopped red onion

1⁄8 cup apple cider

1 tablespoon olive oil

Preheat the oven to 350°F and spray a 9" × 13" casserole dish lightly with nonstick spray.
