Ingredients

1 ounce cellophane noodles

8 ounces chicken breasts, skinless and boneless

1 tablespoon peanut oil

2 teaspoons minced garlic

2 teaspoons minced ginger

¼ teaspoon red pepper flakes

28 ounces chicken broth

2 tablespoons low-sodium soy sauce

2 tablespoons chopped fresh cilantro

2 tablespoons chopped green onions

1 tablespoon chopped fresh basil

Sriracha sauce (optional)

Directions

Step 1: Soak noodles in very hot tap water. While the noodles are soaking, trim all excess fat off the chicken and slice into thin strips.

Step 2: In Dutch oven or large stock pot, heat the peanut oil over medium-high heat. When the oil is hot, add the chicken strips, garlic, ginger, and pepper flakes to the skillet.

Step 3: Sauté ingredients together in the pan for 2-3 minutes, until the chicken starts to brown. Now add broth and soy sauce and bring to a boil.

Step 4: Reduce heat to medium and simmer another 8 to 10 minutes, until the chicken is fully cooked. Remove from heat.

Step 5: Now drain the cellophane noodles and add to the pot. Serve with cilantro, onion, and basil, and stir in Sriracha sauce, or a hot sauce of your choosing, if desired.
