Pizza Bagel (Makings 2 Servings)

Ingredients

2 BreadStop onion poppyseed bagels, sliced in half 2 small handfuls Daiya mozzarella Sheeze shreds 4-6 tbsp. organic tomato sauce

4 small baby bella mushrooms, rinsed, sliced

2 tbsp. organic green bell pepper, core and seeds removed, rinsed, chopped 1 tbsp. sweet yellow onion, rinsed, chopped

dash onion powder

dash garlic powder

dash Goya Adobo without cumin

Instructions: Slice the 2 bagels in ½ down the middle and gently and evenly spread the tomato sauce, and then, the mozzarella sheeze. Once you spread those 2 layers, gently pile on the remaining toppings in any order you like and you can add the seasonings on top, if you like. That's what I do and it's delicious. You can bake the pizza bagel in this way in the oven or toaster oven or you can cook the tomato sauce and vegetables in a fry pan first before baking and that's what I often do and it always comes out delicious and wonderful. I heat ½ C of extra light olive oil in a fry pan on medium heat and when the oil begins to sizzle, I pour in the onions and the green bell peppers. I then stir gently and evenly and allow to cook for 10 minutes or until soft and brown. I then pour in the tomato sauce and continue cooking for another 10 minutes until the tomato sauce mixture is soft and the flavor and aroma is pungent and delicious. If you cook the tomato sauce mixture the way I just described, you can build your pizza bagel the way I described in the beginning. I bake it at 350 degrees Fahrenheit for 15 or 20 minutes. This is one of my family's favorite healthy fast food snacks and it's very nourishing and hearty. Serve and enjoy!
